What do we sharpen?

Knives, of course – even serrated, but we also sharpen, cleavers, hand pruners, loppers and
hedge trimmers. We sharpen chisels, wood-working tools, axes and hatchets, shovels and
hoes. We also do scissors and shears, including pinking shears.

We currently are not able to sharpen salon shears with the Asian rolled edge. We also do

How It’s Done

We restore edges using the Tormek Water-Cooled Sharpening System. Developed in
Sweden for precision wood cutting tools, the Tormek grindstone runs at low speed in water.
Very little material is removed during the grinding process and there is no heat build-up (as
in belt grinding systems) which could cause loss of temper and hardness in the steel.

With the Tormek System, we can set the precise edge angle recommended by the
manufacturer. This allows us to set your edge angle to 17 degrees for that fine, beautiful cut
you want from your chef’s knife, while also being able to quickly readjust to 23 degrees for
your slicers and utility knives. Even the single-bevel Asian style knives, where angle is
critical, can be sharpened accurately and confidently. After grinding a new edge, the blade
is then honed and polished on a leather wheel, creating a polished, razor-sharp edge which
